Ferran Adrià outlines profitability requirements for small bars

Chef Ferran Adrià has highlighted the financial challenges facing the hospitality sector, noting that a bar operated by three partners requires an annual turnover of approximately 300,000 euros to achieve meaningful profitability.

Adrià explained that rising costs have significantly compressed profit margins compared to previous years. While historical models often saw raw material costs at 30% and EBITDA at 18%, current conditions have seen raw materials rise to 40% and personnel costs exceed 30%. Consequently, for every 100 euros earned, the final margin before taxes and financial items may be as low as 7% or 8%.

The increase in overhead is attributed to rising prices across several categories, including raw materials, wages, energy, and rent. Adrià emphasizes the critical distinction between total turnover and actual profit, warning that high revenue does not necessarily equate to high earnings due to these escalating operational expenses.
