Ferran Adrià Urges Spanish Hotels to Serve Local Breakfasts and Flags Salary Gap in Fine Dining
Celebrity chef Ferran Adrià has warned that many Spanish hotel breakfasts overlook locally produced foods. He says hotels should showcase items such as Spanish olive oil, artisan bread, jamón, cheese, fresh fruit and yogurt, arguing that this would enhance the guest experience, differentiate properties and support the domestic agricultural sector.
In a recent podcast interview, Adrià highlighted the economic divide behind fine‑dining culture, stating, "En España solo hay un 5% de personas que ganan más de 60 000 euros" and questioning, "Al que gana 1 500 euros, ¿qué puñetas le importa dónde hay alta cocina creativa?" He called for more affordable menus, suggesting prices of "30 o 20 euros" to make high‑quality cuisine reachable for the majority of Spaniards.
