Food preservation and preparation techniques in Pará

In the Pará region, specific culinary challenges arise when handling preserved foods like dried shrimp and pirarucu.

Dried shrimp often form compact blocks in packaging due to the hygroscopic nature of salt. In hot and humid climates, salt crystals absorb moisture from the air, creating sticky bridges between the shrimp. This process is exacerbated by frequent opening of the package or proximity to heat sources like stoves. Attempting to force the block apart often results in broken shells and damaged product.

When preparing salted pirarucu, the large, rigid scales act as a physical barrier that prevents water from effectively removing salt from the meat. To ensure even desalting, the fish should be scaled and cut into uniform pieces before being soaked in water. Failing to remove the scales can lead to uneven salt distribution, leaving some areas overly salty while others lose firmness.
