Food preservation techniques for extending produce shelf life

Freezing is a simple way to preserve vegetables, particularly in regions with short growing seasons. To maintain quality, it is important to manage enzymes that cause texture and flavor degradation. While most vegetables benefit from preparation, tomatoes can be frozen whole.
Pickling serves as another traditional preservation method using salt or vinegar solutions to inhibit the growth of bacteria and mold. When performed with proper hygiene and sterile jars, pickled vegetables can remain edible for a significant period, providing a food source throughout the winter months.
