Food preservation techniques for potatoes and tomatoes

Effective food preservation techniques for potatoes and tomatoes involve specific environmental controls to prevent spoilage.

For potatoes, storing them in the refrigerator is discouraged as low temperatures trigger a chemical reaction that converts starch into sugar, altering taste and texture. Instead, they should be kept in a cool, dark, and well-ventilated area, such as a pantry or cellar. Exposure to light should be avoided to prevent the production of toxic solanine, and they should be kept away from fruits like apples that release ethylene gas, which accelerates sprouting.

Regarding tomatoes, a traditional method involving burial in wood ash has gained renewed interest. While social media claims suggest tomatoes can last up to six months in ash, experimental studies provide more modest results. Research conducted by the University of Ilorin in Nigeria found that tomatoes stored in ash at approximately 28 degrees Celsius maintained acceptable quality for about four weeks, whereas control groups degraded within three days.
