Food preservation techniques to extend vegetable shelf life

Various methods can be used to extend the shelf life of vegetables and reduce food waste in the kitchen.

One technique involves using paper towels to manage moisture levels in refrigerator drawers. Because excess water can lead to the growth of fungi and bacteria, placing absorbent paper towels between layers of leafy greens helps stabilize the microclimate by capturing excess humidity without dehydrating the vegetables.

Another method, specifically noted for carrots, involves immersion in cold water. To prevent carrots from losing firmness due to dehydration, they can be submerged in a clean container of water. This process restores the rigidity of the vegetable fibers and creates a barrier against the dry air of the refrigerator. For optimal results, it is recommended to remove the green tops from carrots, as they can draw nutrients away from the root, and to use hygienic, airtight containers to prevent bacterial growth and external odors.
