Food preservation techniques using salt for cabbage and herbs

Traditional food preservation methods using salt are highlighted for maintaining the quality and flavor of seasonal produce. For pickling cabbage for winter, precision is key to ensuring correct fermentation and texture. The recommended ratio is between 20 and 25 grams of salt per kilogram of cleaned and sliced cabbage, representing approximately 2 to 2.5% of the cabbage's weight.

Using a kitchen scale is advised over measuring by spoonfuls, as different salt crystal sizes can lead to inconsistent amounts. Using appropriate salt for pickling without additives helps maintain the quality of the brine.

Additionally, fresh herbs such as basil, coriander, fennel, and parsley can be preserved in salt to maintain their texture and aroma, which often diminishes during dehydration. This method produces flavored salt that can be used in various culinary applications, including stews, pasta sauces, soups, and even as a seasoning for bread or snacks.
