Food preservation tips for seasonal harvests

As the harvest season approaches in late summer and autumn, practical methods for organizing and freezing seasonal produce such as berries, mushrooms, and vegetables are recommended to minimize food waste.

Effective freezer management involves rotating stock by placing older items in front and newer items in the back. Labeling bags with both the contents and the month/year of freezing is advised to track shelf life. While berries and vegetables remain stable for long periods, fatty meats and fish should ideally be consumed within one to three months.

Specific advice for zucchini includes freezing it as a puree to maintain quality, as its high water content can cause it to become watery when frozen raw. Alternatively, zucchini can be frozen raw as grated, cubed, or sliced pieces, or pre-steamed to stop enzyme activity and extend shelf life. Pre-steaming is particularly useful for use in stews, sauces, and casseroles.
