Food safety and preparation tips for ground meat

Testing of various ground meat thawing methods has identified the microwave as the fastest option, while refrigerator thawing remains the safest. To prevent food poisoning from bacteria like Salmonella and E. coli, meat should avoid the 'danger zone' between 4.5 and 60 °C. Thawing in a refrigerator set below 4 °C ensures safety, though it is the slowest method, taking between 19 and 24 hours depending on the thickness of the meat.

In terms of culinary preparation, experts suggest avoiding the common mistake of adding large amounts of cold ground meat directly to sautéed vegetables. Doing so drops the pan temperature, causing the meat to boil in its own juices rather than browning. To achieve the Maillard reaction for better flavor, meat should be browned in small batches in a well-heated pan before being added to other ingredients like soffritto.
