Food safety and preservation techniques

Food safety involves a comprehensive set of measures and procedures designed to ensure food is safe for human consumption throughout all stages, from production and transformation to storage, distribution, and preparation. This process aims to prevent and control hazards such as pathogens, viruses, parasites, chemical contaminants, foreign bodies, and allergens.

As global markets become more interconnected, the complexity of the food supply chain increases, making coordinated management essential. Because a single product may contain ingredients from various countries and undergo multiple processing steps, a problem in one stage can impact a large number of consumers.

Thermal treatments like pasteurization and sterilization are key techniques used to reduce bacterial loads and improve shelf life. Pasteurization, a method developed by Louis Pasteur, uses heat below 100 °C to slow enzyme action and reduce microbes like molds and yeasts without completely inactivating all bacteria. This is commonly used for products such as milk and eggs, often followed by rapid cooling to inhibit remaining microorganisms.
