Food safety and preservation tips for bagged salads

Bagged salads, which account for 85% of pre-cut vegetables sold in France, are often marketed as ‘already washed’. However, industrial washing with water and small amounts of chlorine does not eliminate all microbes. If the cold chain is broken during transport, bacteria such as Listeria can develop, leading to regular consumer recalls.

To ensure safety, it is recommended to rinse bagged salads in clear water or soak them for a few minutes before draining. While convenient, bagged salads can cost four to five times more than bulk lettuce.

Regarding preservation, excess moisture in refrigerator vegetable drawers often causes produce to rot. While high humidity is necessary for freshness, stagnant water at the bottom of the drawer leads to rapid degradation. Using a sponge in the vegetable bin can help absorb excess water, potentially extending the shelf life of salads from four days to seven or eight days.
