Food safety experts advise on storing leftover grilling sauces
Following the grilling season, experts provide guidance on how to safely store and use leftover sauces to prevent food waste and health risks.
Janina Unger from the initiative ‘Zu gut für die Tonne!’ notes that mayonnaise-based sauces are particularly sensitive due to their egg content. For optimal storage, these should be kept in the middle of the refrigerator, as the area above the vegetable compartment is the coldest, and temperatures rise toward the top.
To prevent mold, Daniela Krehl of Verbraucherzentrale Bayern advises cleaning dried residue from bottle necks with clean paper. If mold is present in a sauce, the entire container must be discarded immediately. Krehl warns that mold toxins are heat-resistant, meaning cooking the contaminated sauce will not make it safe to consume.
