Food safety experts warn against common kitchen contamination risks

Health authorities are warning against common kitchen habits that increase the risk of food poisoning. Experts note that sensory tests, such as smelling or tasting food, are unreliable methods for detecting pathogens like Salmonella, Listeria, or E. coli, which often do not alter the smell, appearance, or flavor of a meal.

Specific risks include consuming raw dough, as wheat flour is a raw agricultural product that can harbor E. coli from environmental exposure and is not sterilized during processing. Additionally, repeated reheating of leftovers can facilitate bacterial proliferation. To mitigate these risks, authorities like the UK's Food Standards Agency recommend reheating food only once to a uniform high temperature and ensuring food is kept at safe refrigerated temperatures to avoid the 'danger zone' where bacteria multiply rapidly.
