Food safety experts warn against improper aluminum foil use

Experts warn that improper use of aluminum foil can lead to food safety risks and altered flavors. Certain food types can react chemically with the foil, causing a metallic taste or discoloration.

Acidic foods, such as tomatoes, citrus fruits, vinegar-based dishes, and wine-based sauces, are prone to reacting with aluminum. Highly salty foods, including cured meats and aged cheeses, can also trigger reactions that may cause small amounts of aluminum to leach into the food, especially when heat is involved. Marinated meats are particularly high-risk due to the combination of salt and acid.

Beyond chemical reactions, foil can contribute to bacterial growth. Leaving cooked potatoes wrapped in foil at room temperature can create low-oxygen environments that may encourage the growth of botulism-causing spores. Similarly, wrapping large amounts of hot leftovers tightly in foil can trap heat, slowing the cooling process and allowing bacteria to multiply. Experts recommend using glass or plastic containers for acidic or salty foods and cooling leftovers quickly in shallow containers before refrigeration.
