Food safety experts warn of botulism risks in home canning

Experts are warning against common home canning mistakes that can lead to botulism, a serious form of food poisoning caused by Clostridium botulinum. A critical risk factor is the failure to use appropriate heat treatment based on the acidity of the food. High-acid foods, such as jams and acidified tomato products, may be processed using a boiling water bath, but low-acid foods like vegetables, meat, and legumes require pressure canning to ensure safety.

Medical professionals emphasize that botulinum toxin is particularly dangerous because it can be present in food that appears, smells, and tastes completely normal. Relying on sensory checks like smelling or tasting a suspicious jar is not a safe method for detecting contamination.

Physical warning signs that a canned product should be discarded include bulging or swollen lids, leaking, abnormal gas or liquid release upon opening, foaming, mold, or significant changes in color and appearance. To ensure long-term safety, it is essential to use intact jars and properly fitting lids, leaving appropriate headspace, and storing finished products in a cool, dark environment.
