Food safety: Guidelines for freezer storage and expiration dates
Understanding food expiration labels and freezer storage is essential for maintaining both food quality and safety. Freezing at -18 °C slows microbial activity but does not sterilize food. While exceeding recommended freezer durations may not make food dangerous, it can significantly degrade taste, texture, and nutritional value.
Recommended freezer storage times vary by food type: raw ground meat lasts 3-4 months, sausages 1-2 months, beef steaks 4-6 months, and whole poultry 10-12 months. For fish, lean varieties like cod can last about 4 months, while fatty fish like mackerel are recommended for up to 3 months.
It is also critical to distinguish between two types of expiration labels. The phrase ‘use by’ (da consumarsi entro) refers to food safety and microbiological stability; these products should not be eaten after the date, even if they appear normal. In contrast, ‘best before’ (da consumarsi preferibilmente entro) refers to quality. Food marked with ‘best before’ may still be safe to consume after the date, though it may lose fragrance, crunchiness, or flavor.
