Food safety guidelines for long-term frozen salmon storage
Frozen salmon that has been stored for an extended period, such as two years, can remain safe to eat provided that the cold chain has never been interrupted. According to FoodSafety.gov and the Canadian Ministry of Health, food kept continuously at -18 °C (0 °F) remains microbiologically safe indefinitely, though its taste and quality may decline over time.
To ensure safety, the salmon must have been eviscerated, rinsed, quickly frozen flat, and hermetically sealed. Crucially, the product must never have been thawed or exposed to power outages that would raise the temperature. While freezing prevents bacterial proliferation, it does not sterilize food; therefore, maintaining a constant temperature is the essential factor for long-term consumption.
