Food safety guidelines for meal preparation and storage
When practicing meal preparation, following specific hygiene and storage rules is essential to prevent the growth of germs and foodborne infections.
Experts suggest that heated foods should be stored in the refrigerator for no more than three days. For meals prepared at the beginning of the week intended for later days, such as Thursday or Friday, freezing is recommended. In a freezer set to minus 18 degrees Celsius, food can remain edible for several months.
Raw foods, including pre-cut fruits, vegetables, and salads, have a shorter shelf life and should ideally be consumed within one day of preparation. To minimize cross-contamination from cutting boards, knives, or hands, the Federal Institute for Risk Assessment (BfR) recommends preparing foods that do not require heating—such as salads and desserts—before preparing items that will be cooked.
