Food safety risks associated with consuming Nem Chua
Nem chua, a popular Vietnamese fermented pork dish, carries potential food safety risks due to its preparation from raw meat. While the fermentation process provides its characteristic flavor, it does not guarantee the elimination of all pathogenic bacteria.
According to Assoc. Prof. Dr. Nguyen Duy Thinh, former lecturer at the Institute of Biotechnology and Food Technology, Hanoi University of Science and Technology, improper raw materials, unhygienic processing, or unsuitable fermentation conditions can lead to gastrointestinal pathogens. Consuming contaminated products may cause diarrhea, abdominal pain, vomiting, or serious complications in vulnerable individuals.
To mitigate risks, consumers are advised to choose products with clear origins, proper labeling, and manufacturing information. It is important to avoid unlabeled products or those sold in unhygienic conditions. Consumers should also discard any products showing signs of spoilage, such as sliminess, mold, discoloration, or unusual odors.
