Food storage and nutrition: Tips for fruits and vegetables

Nutritional and storage advice suggests that frozen fruits can be as healthy as fresh ones. Because frozen fruits are often processed and frozen shortly after harvest at peak ripeness, they can retain significant levels of vitamins and minerals. While some vitamins are sensitive to light and oxygen, rapid freezing can help preserve nutrients like Vitamin C, which might otherwise degrade during the transport and storage of fresh produce.

Regarding vegetable storage, experts advise against keeping certain items in the refrigerator to prevent spoilage. Cucumbers should be stored in a cupboard or on a kitchen counter, as cold temperatures can cause their skin to wrinkle and their interiors to become soft. Similarly, tomatoes should be kept at room temperature to maintain texture and flavor. Other items that should avoid refrigeration include onions, potatoes, melons, and bread.
