Food storage tips: Why the refrigerator is not ideal for all items
Proper food storage is essential for maintaining quality and reducing waste, but certain items should not be kept in the refrigerator. According to the National Center for Home Food Preservation, factors such as temperature, humidity, and packaging play critical roles in preservation.
Raw potatoes are better stored in a cool, dark, dry, and well-ventilated space, as low temperatures can diminish their quality. Similarly, whole, unpeeled onions prefer cool and ventilated environments, though they should be refrigerated once cut.
Storing bread in the refrigerator is also not recommended. The cold temperature accelerates starch retrogradation, a process that alters the starch structure and causes the bread to become firm and dry. While the freezer is a better option for long-term preservation, refrigeration often causes bread to lose its soft texture and aroma more quickly due to moisture evaporation.
