Food waste reduction efforts focus on upcycling and community prevention
Efforts to combat food waste are being addressed through both industrial upcycling and community-based prevention strategies. In India, research is exploring the repurposing of coffee silverskin—the thin outer layer of coffee beans discarded during roasting—as a functional ingredient in baked goods. Because silverskin is high in dietary fiber and antioxidants, studies are investigating its use as a partial flour replacement in brownies to enhance nutritional value and consumer desirability.
In the United States, Food Waste Prevention Week highlights the economic and social impact of food loss. Data from the World Wildlife Fund indicates that nearly one-third of food in the U.S. goes uneaten, with households accounting for half of that waste. To address food insecurity and waste, community initiatives like The Community Fridge Project provide free, 24/7 access to food in specific neighborhoods, while organizations encourage meal planning, proper storage, and composting to reduce environmental impact.
