Food waste reduction through gardening and improved storage
Experts are offering guidance on reducing food waste through better storage and home gardening techniques.
Oklahoma State University Extension suggests using kitchen scraps for vegetative propagation. This process allows families to grow new plants from stems or leaves rather than seeds, serving as a hands-on science activity for children.
To prevent spoilage, food safety experts from Purdue University and registered dietitians recommend several storage adjustments. Key advice includes waiting to wash produce until just before consumption to avoid excess moisture, which encourages the growth of bacteria, yeast, and mold. Additionally, cutting fruits and vegetables before storage can speed up spoilage by damaging cell walls. Maintaining proper airflow in refrigerators and treating certain items, such as herbs, with specific moisture controls can also extend shelf life.
