Four family members hospitalized in China after consuming homemade salted beef

Four members of a family in Fuzhou, Fujian Province, were rushed to the hospital after consuming homemade salted beef. The family members experienced severe symptoms, including intense abdominal pain, fever exceeding 40 degrees Celsius, vomiting, and diarrhea.

Medical examinations at the First Affiliated Hospital of Fujian Medical University revealed that the patients had abnormally high inflammation levels. Laboratory tests identified Salmonella levels in the intestines that were 300 times higher than the permitted limit.

The incident involved beef that had been marinated with salt, alcohol, ginger, and garlic, then fermented for one to two days. While some portions were partially cooked, the family reportedly consumed parts of the meat raw, believing it to be more nutritious. The wife of the family head was the only member unaffected as she declined to eat the undercooked meat.
