Freezing Bread Lowers Glycemic Index and Boosts Health Benefits

Freezing fresh bread and reheating it creates resistant starch, which reduces the bread’s glycemic index and provides food for beneficial gut bacteria. The process also preserves flavor and prevents waste, but the bread should not be refrozen after thawing.

A dietitian listed eleven alternatives to traditional wheat bread, including corn tortillas, sweet‑potato toast, lettuce leaves, cauliflower crust, cloud bread, rice paper, nori seaweed, almond‑flour flour, baked eggplant slices, sprout‑based bread, and chickpea or manioc tortillas. These options cater to gluten intolerance, low‑carb preferences, and nutritional variety.
