French chefs launch new mobile and street-food dining concepts
French chefs are expanding their culinary reach through mobile and accessible dining concepts.
In Bordeaux, chef Philippe Etchebest has launched ‘Signature,’ a street-food kiosk located at the Saint-Jean station. The project offers a rapid, nomadic version of his cuisine, specializing in various ravioles including savory options filled with foie gras, vegetables, or ham and cheese, as well as sweet versions with chocolate or lemon meringue. The kiosk is scheduled to be available until September 30.
In the Côtes-d'Armor region, Jean-Jacques Monfort, chef of the Gault & Millau-recognized restaurant Brut, has introduced ‘Brut Cuisine Nomade.’ This concept aims to bring high-quality bistronomy to diverse settings such as weddings, festivals, and corporate events. Rather than using a traditional food truck, the service focuses on bringing restaurant-standard local cuisine to locations like gardens, farms, or seaside settings, often including activities like foraging workshops and cooking classes.
