To prepare homemade pumpkin puree, small pie pumpkins are recommended over larger carving varieties due to their sweetness and ease of handling. The process involves cutting the pumpkins, removing the seeds, and roasting them face down on a baking sheet with a small amount of water at 350 degrees for 60 to 90 minutes. Once cooled, the flesh can be blended into a puree. The consistency can be adjusted by draining excess water through a colander, and the final product can be stored in the freezer for future use.
