During the television program ‘È sempre mezzogiorno’ on Rai 1, Fulvio Marino presented a recipe for ‘soma d’aj’, a traditional garlic bread rooted in Piedmontese culinary history. The segment served as a tribute to Carlin Petrini, a gastronome and environmentalist whom Marino knew personally.

The recipe utilizes a blend of three flours—type 2, white spelt, and whole rye—combined with sourdough starter, water, and salt. The preparation involves a three-hour room temperature fermentation followed by an eight-hour refrigeration period to manage the delicate dough. The bread is traditionally served with garlic and oil, often accompanied by items such as vitello tonnato, salame, or vegetable frittatas.
