Fusión 2026 gastronomic fair to open in Lima

The Fusión 2026 gastronomic fair, organized by América Multimedia, begins on Thursday, September 3, at the Costa Verde esplanade in Magdalena del Mar, Lima. Running until Sunday, September 6, the event aims to expand upon its inaugural edition, which drew approximately 30,000 attendees.

The festival will feature over 60 restaurants and approximately 100 culinary options representing the coast, highlands, and jungle regions of Peru, alongside international fusion. While 60% of the participants are returning from the previous year, 40% are new selections chosen through an evaluation process. Specialized areas include ‘Panguchable’ for sandwiches, ‘Fuego’ for grilled dishes, ‘Contigo Perú’ for traditional food, and ‘Otros Mundos’ for international fusion.

A major highlight is the ‘Experiencia Fusión Perú,’ an immersive five-course dining experience. This limited-capacity offering uses audiovisual projections, sound effects, and specific aromas to complement dishes such as Pacific raw seafood and Amazonian paiche, aiming to transport diners through different Peruvian landscapes.
