Futura restaurant opens in Rome with heritage-focused menu

Futura, a new restaurant in Rome's Rione Monti district, features a kitchen-centric layout with a large polychrome marble counter. The establishment is operated by three owners: Anastasia Paris, Flavia Ercoli, and Luigi David Carofilis.

Chef Anastasia Paris, who previously worked at Manco and Osteria della Trippa, leads the kitchen. The restaurant's new menu, titled ‘Sangue’, focuses on diverse ingredients including vegetables, fish, fermentations, and offal, using the concept of blood as a metaphor for heritage and memory.
