Gastronomika hosts inaugural International Cod Meeting

The Gastronomika congress held its first International Cod Meeting, highlighting the historical and geostrategic importance of the fish. The event began with a cod unloading in the port of Pasaia, Gipuzkoa, a location that served as a major global hub for cod for centuries.

As part of the program, chefs explored various culinary traditions related to cod across the Basque Country and Navarra. Presentations included traditional recipes such as 'arrieroc' from Navarra, the 'pil pil' method from Bizkaia, and various preparations involving gelatin and cod tripe.
