Gedelek pickle production relies on Pınarbaşı spring water

In the Gedelek neighborhood of Orhangazi, Bursa, the production of geographically indicated pickles relies heavily on the mineral composition of Pınarbaşı spring water. Local producers and Gedelek Neighborhood Headman Orhan Çakar state that the water’s high calcium and lime content is essential for maintaining the characteristic crisp texture of the pickles by preventing vegetables from softening.

The region produces approximately 30,000 to 40,000 tons of pickles annually, spanning about 35 different varieties of fruits and vegetables. While raw materials are sourced from various Turkish provinces including Afyonkarahisar, İzmir, Balıkesir, Çanakkale, Adana, and Konya, the processing occurs using the local spring water distributed via BUSKİ infrastructure.

Finished products are distributed throughout Turkey, with significant exports reaching Germany, France, and several Arab countries. Additionally, the Pınarbaşı area, home to 600-to-700-year-old registered plane trees, is being developed into a recreational area for visitors to experience the local pickle culture.
