Chef Gennaro Contaldo has opened BOLO, a 32-seat Italian trattoria located on Air Street in London’s Soho district. Inspired by the atmosphere of 1970s Italian restaurants, the establishment focuses on simple, traditional cooking using high-quality ingredients.

The menu features six fresh pasta dishes, including the namesake ‘Original Bolo’ Bolognese. Other offerings include ‘The Antonio’, a tribute to the late food icon Antonio Carluccio, and ‘The Limone’, which draws inspiration from Contaldo’s childhood on the Amalfi Coast. The restaurant maintains a curated approach with a small menu and a simplified wine list.
