German nursing homes serve overly fatty, salty meals to seniors

In many German nursing homes and day‑care facilities the standard menus consist of processed dishes such as powder‑based mashed potatoes, cream‑sauced noodles and banana desserts. The meals regularly contain high levels of fat, salt and sugar and include additives like flavor enhancers, starch, coloring agents and curing salts. Health experts warn that this nutritional profile raises the risk of hypertension, diabetes and heart disease among elderly residents.

The problem is linked to cost pressures: food prices are rising while budgets for senior care are stagnant or shrinking. Large institutional kitchens that also supply hospitals, kindergartens and schools focus on efficiency and low labour costs, often opting for instant or pre‑made preparations instead of cooking with fresh ingredients.
