Germany gingerbread production falls 10% in 2025
German gingerbread (Lebkuchen) production saw a significant decline in 2025, according to data from the Federal Statistical Office (Destatis). Total production reached approximately 72,800 tons, marking a 10% decrease from the 81,000 tons produced in 2024. This figure represents the lowest production level recorded in the last seven years.
Despite the domestic decline, Germany remains a major exporter of the seasonal pastry. In 2025, nearly 20,000 tons were exported, primarily to European neighbors. The largest importers were Austria (4,200 tons), Poland (3,700 tons), and France (2,100 tons), which together accounted for 50% of all exports. Outside of Europe, the United States was a key market, receiving 1,100 tons.
Production cycles remain heavily weighted toward the second half of the year, with 89% of exports occurring after July. Conversely, Germany imported approximately 10,000 tons of gingerbread in 2025, with over half (53%) originating from Poland.
