Global gastronomy shifts toward tasting menus and communal dining

The global gastronomy landscape is undergoing a shift as Michelin-starred hotels and renowned chefs move away from traditional buffet breakfasts in favor of sophisticated tasting menus. This trend aims to transform breakfast from a quick meal into a curated culinary experience. Examples include Sweden’s Äng restaurant, which offers multi-course menus featuring Nordic caviar, and Massimo Bottura’s Casa Maria Luigia in Italy, which serves dishes inspired by childhood memories.

In Istanbul, chef Fatih Tutak, Turkey’s first two-Michelin-starred chef, is also redefining high-end dining. Moving away from rigid, formal rituals, Tutak emphasizes sincerity and shared dining experiences. His project, Gallada, located at The Peninsula Istanbul, blends Turkish culinary heritage with influences from China, Japan, and the Middle East, utilizing Silk Road inspirations to create a communal dining atmosphere.
