A literature review conducted at the Instituto Federal Goiano examines the relationship between gluten consumption and inflammatory processes in the human body. The study highlights that while the link between gluten and celiac disease is scientifically established, research is ongoing regarding its inflammatory effects in other conditions, such as non-celiac gluten sensitivity.
The research indicates that gluten acts as a direct trigger for immunological and inflammatory responses in genetically susceptible individuals. Furthermore, alterations in the intestinal barrier may contribute to systemic inflammatory responses, emphasizing the role of the intestine in regulating bodily homeostasis.
