Gluten-free food accessibility and culinary adaptations

Gluten-free culinary options are expanding through both traditional recipe adaptations and strategic retail developments. In cooking, classic desserts can be modified by substituting wheat flour with alternatives like rice flour, buckwheat, or nut purees to maintain texture and flavor.

Spain is noted for its high accessibility to gluten-free products for travelers. Major retailers like Mercadona have implemented long-term strategies to support the celiac community. Since 2000, Mercadona has increased its gluten-free references from 50 products in 2002 to over 1,500 in 2023. Rather than relying solely on dedicated aisles, many standard private-label products—including sauces, snacks, and prepared meals—are formulated to be gluten-free, reducing the need for separate specialized versions.
