Granadoro Vacche Rosse celebrates 90 years with record cheese
Azienda Agricola Granadoro Vacche Rosse celebrated its 90th anniversary in Cavriago with the unveiling of a record-breaking 14-year-aged wheel of Parmigiano Reggiano made from Red Cow (Razza Reggiana) milk.
The event, attended by over 300 visitors and local officials, highlighted the efforts of the Catellani family and other breeders in saving the Red Cow breed from extinction. The family, led by Matteo and Luciana Catellani, manages a herd of 320 animals, representing the largest nucleus of this breed.
Since 1991, the farm has focused on producing pure Parmigiano Reggiano from this specific breed. Currently, approximately 25,000 wheels are produced annually, with a minimum aging requirement of two years.
