The dish involves slow-sautéing grated tomatoes in olive oil until the liquid evaporates and the flavors concentrate, before adding lightly beaten eggs. In regions like Mani and Messinia, it is often enriched with local ingredients such as cured pork (siglino) or spicy sfela cheese.

For a modern variation, spinach and feta pancakes serve as a savory brunch option. This recipe utilizes fresh spinach, eggs, milk, and flour, combined with crumbled feta and parmesan or graviera cheese. The spinach can be blended with eggs and milk to create a uniform green batter, which is then cooked in a pan and served with accompaniments like strained yogurt, avocado, or a poached egg.
