Green tomato preparation and safety tips

As autumn approaches, seasonal preparations for green tomatoes (gogonele) focus on both preservation and safe consumption. For those looking to pickle green peppers or tomatoes, a key method for maintaining a crunchy texture involves a short blanching process of only 1-2 minutes in hot liquid.

Regarding health, consuming large quantities of raw green tomatoes is not recommended due to high levels of solanine, a natural toxin found in the Solanaceae family. Excessive intake of raw green tomatoes can lead to symptoms such as nausea, abdominal cramps, headaches, and dizziness. However, solanine is heat-unstable and partially water-soluble, meaning that cooking the tomatoes through boiling, frying, or baking significantly reduces the risk of toxicity.
