Green tomato preservation technique for winter pantry

To prepare green tomatoes for winter preserves, a technique involves briefly pouring boiling water over them for two to three minutes. This process softens the thick skin to allow better absorption of marinades and spices, such as garlic, horseradish, and parsley, while maintaining a crunchy interior.

For optimal flavor, tomatoes can be pierced with a toothpick or lightly slit to insert garlic and parsley before being placed in jars. It is important not to exceed the three-minute limit to avoid overcooking the fruit and losing its texture.
