Guidelines for freezing and storing food in the freezer

Freezing is a primary method of food preservation that works by lowering temperatures to approximately 0°F (-18°C), which blocks enzymatic activity and the growth of harmful microorganisms. While food can technically be stored indefinitely at these temperatures, quality and nutritional value diminish over time.

Specific storage guidelines vary by food type. For beef, optimal quality is generally maintained within 4 to 12 months, though ground beef may only last 3 to 4 months. Raw chicken pieces can typically be stored for up to 12 months.

Differences in freezing methods also affect quality. Industrial deep-freezing is rapid, preventing large ice crystals from damaging cellular tissues. In contrast, domestic freezing is slower, often resulting in larger ice crystals that can alter the consistency, flavor, and odor of the food.
