Guidelines for selecting and cooking Thanksgiving turkey

Preparing a Thanksgiving turkey requires careful planning regarding size, thawing, and cooking temperatures. To ensure enough food for guests and leftovers, experts suggest planning for 1 to 1.5 pounds of uncooked whole turkey per person.

When purchasing, consumers should consider whether to buy fresh or frozen. Frozen turkeys require approximately 24 hours of refrigerator thawing for every 4 to 5 pounds. It is recommended to avoid fresh pre-stuffed birds and to check labels for added solutions.

Cooking times vary based on the bird's weight and oven temperature. At a recommended temperature of 325°F, an unstuffed 12- to 14-pound turkey takes approximately 3 to 3.75 hours. Using a food thermometer is essential to ensure safety; the thickest part of the breast should reach 160°F, while any stuffing must reach 165°F to be safe.
