Gut microbiota converts dietary nutrients into heart-protective molecules

Researchers at the Karolinska Institutet have identified a physiological process where gut microbiota transform dietary components into protective molecules. According to a study published in the journal Cell, microorganisms in the gut convert nitrates—found in vegetables like spinach, beets, and arugula—and non-heme iron from legumes and whole grains into dinitrosyl-iron complexes.

These molecules travel through the bloodstream to organs such as the liver and kidneys. Experiments involving mice, cells, and human samples demonstrated that these complexes can improve health indicators in models of cardiovascular and metabolic diseases. Andrei L. Kleschyov, a lead researcher at the institute, noted that gut bacteria are capable of converting nutrients into biologically active molecules that influence vital bodily functions.

In a separate nutritional context, grape seed oil is noted for its high content of unsaturated fatty acids, particularly linoleic acid (an omega-6), and vitamin E. While often marketed as a miracle cure, scientific evidence suggests its primary benefit lies in replacing saturated fats to improve LDL cholesterol levels and cardiovascular risk, rather than acting as a standalone cure for inflammation.
