Hakutsuru Sake Brewing to launch premium Tenku Junmai Daiginjo

Hakutsuru Sake Brewing Co., Ltd. has announced the launch of its premium sake line, ‘Chotokusen Hakutsuru Tenku Fukurotsuri Junmai Daiginjo,’ scheduled for nationwide release in Japan on September 4, 2026.

Positioned as the highest-tier product within the ‘Tenku’ brand, the sake is available in two varieties: Yamada Nishiki and Hakutsuru Nishiki. The company is utilizing a 29% rice polishing ratio for the first time to achieve enhanced clarity and flavor. The production process employs the ‘fukurotsuri’ method, where sake is collected by allowing it to drip naturally from bags without applying pressure.

The Yamada Nishiki version uses rice specifically grown in the Shinden district of Miki City, Hyogo Prefecture, through a partnership with contract farmers. The product features artisanal craftsmanship, including hand-made koji using the ‘futakoji’ method and hand-crafted bottles designed to resemble the neck of a crane. Additionally, the packaging includes NFC tags to allow customers to verify authenticity and access brand information via smartphone.
