Harts Group to open Los Primos in Borough Market

Harts Group is replacing its Parrillan restaurant in Borough Market with a new Spanish-style neighbourhood bar called Los Primos. The transition begins with Parrillan closing on September 28th to prepare for the new concept, which is scheduled to open this November on Dirty Lane.

Los Primos, which means ‘cousins’ in Spanish, is inspired by the intergenerational, accessible drop-in bars found across Spain. The venue will offer an all-day experience, serving churros and coffee in the morning, bocadillos and snacks for lunch, and beer, wine, and tapas into the night. The menu, developed with culinary leadership from Barrafina, includes items such as albondigas, tortillas, and various cold and hot tapas.

Sam Hart, CEO of Harts Group, noted that the move aims to fill a market gap in Borough for high-quality, authentic dining that is more affordable than the high-end restaurants currently dominating the area. The new concept focuses on accessibility, offering small glasses of beer known as cañas and various snacks intended to provide a ‘fun, accessible place’ without the high price points associated with recent restaurant trends.
