HBLFA Tirol reports rising demand for Graukäse cultures

Demand for Tyrolean Graukäse is rising, as evidenced by the sale of over 500 cheese cultures through the HBLFA Tirol in July alone. The HBLFA Tirol, an institution of the Ministry of Agriculture, supports the dairy industry by providing research, consulting, and the essential microorganisms required for cheese production and ripening.

Originally developed to utilize skimmed milk left over from butter production, Graukäse has evolved from a byproduct into a successful regional specialty with a Protected Designation of Origin (PDO). The cheese is noted for its high protein and low fat content, aligning with modern nutritional trends. This growth provides additional value for small-scale dairy farms and helps secure regional production structures in the Alpine region.
