Herb preservation methods using oil and salt

Methods for preserving the flavor and texture of aromatic herbs like basil, parsley, chives, and coriander have been highlighted to prevent them from becoming limp or flavorless during storage.

One technique involves preserving basil in a jar using salt and olive oil. The process requires washing and drying the leaves, chopping them with salt, and then packing them into a glass jar covered with olive oil. This mixture should be stored in a cool, dry place such as a refrigerator to maintain its aroma for several months.

Another approach to combat the damage caused by traditional freezing—where ice crystals rupture cell walls and cause loss of essential oils—is to use ice cube trays. By mixing herbs with olive oil or melted butter before freezing, a protective fat layer is created that helps lock in the volatile aromatic compounds, preserving the freshness of the herbs for later use in pasta or sauces.
