Hiperbaric advances preservative-free food through high-pressure technology

Hiperbaric, a global leader in industrial high-pressure processing (HPP) equipment, is facilitating the production of preservative-free foods. This technological shift follows recent scientific studies in France linking certain industrial preservatives to increased risks of diabetes type 2 and cancer.

HPP technology utilizes hydrostatic pressure transmitted through water—up to 6,000 bars—to eliminate pathogens such as Listeria and Salmonella. This method allows for the removal of artificial preservatives and colorants while maintaining the natural flavor, texture, nutritional value, and shelf life of fresh products. The technology also helps address food waste by extending product longevity without chemical additives.
